This cobbler is apart of my challenge to cook 365 new meals in 365 days, not repeating a single one. Super easy and a great way to use up fruit before it goes bad!
Combine the first five ingredients in a skillet over medium low heat. Simmer 20 minutes or until fruit is soft.
Meanwhile, in a bowl, combine the next six ingredients and set the bowl to the side.
Once fruit is soft, place in a greased, oven proof dish (9×13 or similar size).
Top the fruit with the rolled oat mixture, spreading evenly and place into a pre-heated 425 degree F oven for 20 minutes.
Serve alone or top with a dollop of whipped cream or ice cream!
