I know this recipe sounds unusual, but everyone loves it because it is so different. It’s like having a cookie on top of your pie. I found this recipe on the internet after searching for new ideas using cranberries. This recipe is adapted from “Cooking with Wild Berries of Down East Maine” by the Bar Harbor Jam Company.
1. Chop cranberries in a blender.
2. Combine cranberries, brown sugar, and nuts.
3. Pour into prepared pie shell.
4. Beat eggs and sugar together
5. Add flour and melted butter and pour batter over the berries
6. You may sprinkle coarse sugar on top. It makes it sparkle.
7. Bake at 400 F for 15 minutes.
8. Reduce heat to 350 F and bake for 35 minutes more.
