A delicious summertime treat; fresh berries wrapped in a yummy and flaky pie crust. The freshly whipped heavy cream seals the deal!
Mix dry ingredients (sugar, flour, gelatin) and add up to 1 cup of water in a medium saucepan. Cook over medium heat until it’s clear red, stirring often. Bring to a boil; continue cooking for 5 minutes. Then remove from heat and cool until room temperature.
De-stem and halve the berries; wash and dry. Mix berries with room temperature sauce and pour into baked pie shell. Refrigerate.
Using a hand mixer, whip heavy cream until it thickens and then dollop each piece of pie.
