Description

If you have ever searched for the perfect dense, squidgy brownie, this is it. The texture of these brownies are accurately reflected in the title: they are indeed decadently dense, squidgy and gooey.

Ingredients

  • 6 Tablespoons Butter Or Margarine
  • 8 ounces, weight Bittersweet Chocolate, Chopped
  • ¾ cups Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Instant Coffee Powder
  • ½ teaspoons Salt
  • 2 whole Eggs
  • ¼ cups Flour
  • 1 cup Walnuts (optional)

Preparation

1. Preheat oven to 350°F.
2. Grease an 8×8″ square pan. Set aside.
3. In a medium saucepan over low heat, melt butter. Add the chocolate and stir until melted.
4. Remove the pan from the heat and stir in the sugar, vanilla, coffee powder and salt until combined.
5. Beat in the eggs one at a time.
6. Add the flour and stir vigorously for 1 full minute. The batter should become smooth, glossy and elastic.
7. Stir in chopped nuts, if using.
8. Scrape the batter into the prepared pan and bake until the centre feels almost set, about 30 minutes. Do not overbake!
9. Let the brownies cool completely in the pan, then cut into 16 squares.

The end of the grocery week caught me with no dessert in sight and less than a stick of butter in the house, and just when I thought I was going to have to suffer through until payday, I found this recipe. Happily, I had exactly two eggs left, and so into the kitchen I went. I was not disappointed! These brownies are rich and fudgy and pretty great. I added mini chocolate chips instead of walnuts, and skipped the coffee powder, and they still came out wonderfully. Thanks for a great recipe!
