My husband loves this old family recipe. When my mom walks through the door with this delicious chocolate pie in hand, I can see his mouth start to water as he rushes over and offers to take it off her hands.
Prepare and bake pie crust in a 9″ pie dish. I use Jiffy pie crust mix and follow directions on back of box (you typically only need to add water).
Mix in saucepan sugar, cornstarch, salt, unsweetened chocolate and gradually add milk. Cook on medium heat, stirring constantly, until mixture thickens and boils for 1 minute. Remove from heat.
Stir half of the slightly beaten egg yolks into hot mixture, blending well. Then stir remaining egg yolks into hot mixture, blending well. Place back on medium heat and let boil 1 minute more, stirring constantly. Remove from heat.
Blend in butter and vanilla. Pour into baked pie crust. Refrigerate for approximately 4 hours or until cold.
Top with whipped cream, fruit or shaved chocolate.
