Dairy and sugar free almond chocolate truffles.
Process cashews in a food processor until fine. Place cashews in a bowl and add melted coconut oil, salt, honey, vanilla essence, almond essence and cinnamon, mixing well with a metal spoon. Add cocoa and stir until combined. The mixture will be nice and thick. Place in the freezer for 20 minutes.
Take about 1 heaping teaspoonful of the mixture and roll into a small ball with your hands. Do this with remaining mixture. Roll each ball in shredded coconut, ground almonds, cranberries or cocoa powder.
Store in the fridge until you are ready to eat.
