This is a yummy and easy recipe from my grandmother who was a professional cook. The last years of her career were spent in the kitchen of a golf course. The members knew her as “The Pie Lady” for her delicious specialties.
For the pie:
Put cream cheese, sugar and eggs in a mixing bowl. Beat until well combined.
Pour into a 9″ glass pie plate and bake at 325 degrees for 40-50 minutes. Test the centre to make sure it’s done.
Cool the pie on a rack for 15-20 minutes. This allows a crust to form on the edge.
For the topping:
Combine sour cream, sugar and vanilla in a mixing bowl and mix well. Spoon this onto the centre of the pie and spread it around, leaving a 1-inch border.
Bake at 325 degrees for 15 minutes. Cool and refrigerate.
Before serving, garnish with fresh fruit. It looks great if you put the fruit on the border that you left around the topping. Or just spread it all over the top. Either way, it tastes great.
Remember – the food you eat away from home has no calories so take this to a friend’s home and enjoy.
