Description

When you have packets of cream cheese in the fridge and you have no idea why, the first thing that comes to mind is cheesecake.

These brownies are the perfect solution – a little bit of cheesecake, a little bit of dark rich brownie and a lot less time in the oven.

Ingredients

  • FOR THE BROWNIES:
  • ¾ cups Unsweetened Cocoa Powder
  • ½ teaspoons Baking Soda
  • ⅔ cups Oil, Divided
  • 1 cup Boiling Water
  • 2 cups Sugar
  • 2 whole Eggs
  • 1-½ cup Whole Wheat Flour (or A Mix Of All-Purpose And Whole Wheat)
  • 1 teaspoon Vanilla
  • ½ teaspoons Salt

  • FOR THE TOPPING:
  • 6 ounces, weight Cream Cheese, Softened
  • ½ cups Sugar
  • ½ teaspoons Vanilla
  • 1 whole Egg, Beaten

Preparation

1. Preheat oven to 350F.
2. In large bowl, mix together cocoa powder and baking soda.
3. Blend in 1/3 cup of oil.
4. Add boiling water to cocoa mixture and stir until mixture thickens.
5. Stir in sugar, 2 eggs, and remaining 1/3 cup of oil. Stir until smooth.
6. Add flour, vanilla, and salt and stir until combined.
7. Pour into a 9×13 baking dish.
8. For cream cheese swirl topping, mix together cream cheese, 1/2 cup sugar, 1/2 teaspoon vanilla, and 1 egg.
9. Drop by spoonful on top of brownie batter and swirl into batter.
10. Bake 35-45 minutes or until toothpick comes out clean.

I liked these except the wheat flour made it grainy. I wish I had just used normal flour instead. The cream cheese topping is my favorite part. It is very yummy.

I mean, unless the recipe didn’t chemically work, how could this be bad? I served it with strawberries. I was surprised that the final product isn’t actually all that sweet despite the incredible amount of sugar that I felt like I was pouring in! It was very yummy–and I suspect it will be even better cold (since I couldn’t wait).
