Description

Cranberry, Chocolate & Oat Bars – A perfect Snack on the go!

Ingredients

  • 1 cup Dried Cranberries
  • ½ cups Raisins
  • ¼ cups Orange Juice
  • 1-½ cup Flour
  • 1-½ cup Quick Cooking Oats
  • 1 teaspoon Baking Powder
  • ¾ cups Butter
  • 1-½ cup Firmly Packed Brown Sugar
  • 2 whole Eggs
  • ½ cups Coconut
  • 1 cup Chocolate Chips
  • ½ cups Nuts

Preparation

Preheat oven to 350.

Spray 9×13 inch pan. Dust lightly with flour and tap out excess.

Combine cranberries, raisins and orange juice in microwaveable bowl. Microwave 30 sec. Let stand while you prepare the rest of ingredients.

Meanwhile, combine flour, oats, baking powder and set aside.

Beat butter and sugar in mixing bowl until creamy. Add eggs, one at a time, beating after each addition.

Gradually add flour mixture a little at a time until just blended.

Stir in cranberry and raisin mixture, chocolate, coconut and nuts.

Spread dough into prepared pan.

Bake 20 to 22 min. until center is set.

Cool completely before serving. Cut into bars and store in tupperware or cookie jar. Perfect for outings and snacks!

You will want to check them at about 20 minutes, but they will probably need a bit longer. I baked mine for about 24 minutes, then turned off the oven and let them continue baking for a few more minutes.

These were so yummy and totally loaded wih goodness. Mine didn’t come out as pretty, but I didn’t care because they were amazing. I initially made them for my husband to take to work, but I’m not really sure how many he’s going to get ;)
When I made it I did add extra orange juice, cinnamon and nutmeg.
