Description

Classic chewy blondies stuffed with white chocolate chips and crushed Oreos, topped with melted white chocolate and more crushed Oreos! These rich, decadent squares will definitely satisfy your sweet tooth.

Ingredients

  • 1 cup All Purpose Flour, Sifted
  • ½ teaspoons Baking Powder
  • ⅛ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Packed Light Brown Sugar
  • ⅓ cups Butter, Melted
  • 1  Egg, Beaten
  • 1 Tablespoon Vanilla Extract
  • ¾ cups White Chocolate Chips, Divided
  • ¾ cups Oreos/chocolate Sandwich Cookies, Divided

Preparation

1. Preheat oven to 350ºF. Grease a 9×9 baking pan (an 8×8 baking pan also works fine).
2. Add flour into a bowl. Add baking powder, baking soda, and salt. Mix well. Set aside.
3. In a large bowl stir the brown sugar into the melted butter and mix well. Cool slightly.
4. Mix the beaten egg and vanilla extract into the brown sugar mixture. Add the flour mixture, a little at a time, mixing until just combined (do not over-mix). Gently mix in 2/3 of the white chocolate chips and crushed Oreos.
5. Spread batter into the prepared pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20–25 minutes.
6. Take the blondies out and allow them to cool for 15 minutes.
7. Melt remaining 1/3 of the white chocolate chips in the microwave, heating for 30 seconds at a time until smooth. Spoon the white chocolate over the blondies and spread with an offset spatula to create an even coating (it’s okay if it’s not pretty or perfect, we’re covering it with Oreos). Top with the remaining 1/3 of the crushed Oreos. Refrigerate for 15–20 minutes to set the white chocolate, then allow it to cool completely before cutting into small squares and serving. Enjoy!

Notes:
1. The traditional blondie batter (without the white chocolate and the Oreos) is really delicious just by itself. Add some chocolate chips and some nuts if desired, and you have a fantastic cookie bar.
2. Feel free to substitute M&Ms or any other candy in this; there are so many good possibilities!
