Easy and delicious chocolate covered coconut balls.
In a large bowl, combine coconut, icing sugar, sweetened condensed milk, and melted coconut oil. Mix well. Use a 1 ounce ice cream style scoop to scoop balls onto a parchment paper lined tray. (You can also use your hands to form balls that are around 1″ big.) Place balls into the freezer for an hour or two until hardened.
In the top of a double boiler, melt the milk chocolate. You will need about 2 cups of chocolate once melted to coat all the coconut balls. Dip each frozen coconut ball into the melted chocolate and shake off excess chocolate. Place on a parchment lined baking sheet and sprinkle with extra coconut if desired.
