My aunt made these one holiday and I took them over and have been baking them every Christmas since. They make great additions to cookie gift plates or an accent to Christmas dinner! The butter and sugar mixture carmelize a little on top and make for a very rich topping.
Preheat oven to 350 degrees. In a mixing bowl, combine cream cheese, vanilla extract and 1 cup of sugar until blended. In a 9×13 cake pan, unroll 1 package of crescent roll dough into a sheet that covers the bottom of the pan. Spoon and smooth cream cheese mixture over the dough, then unroll the second sheet of dough to cover the top.
Mix remaining 1/2 cup sugar and cinnamon (you can use between 2-3 tablespoons, I like more to cut the sweetness a little) together. Pour melted butter evenly over top, then sprinkle cinnamon/sugar mixture all over. Bake for 30 minutes and refrigerate until cool, then cut into squares before serving.

This is an awesome recipe….I call it Sopapilla Cheesecake, quick easy and a super big hit anytime I make it!
