Description

Here’s a yummy pie recipe for your holiday celebrations. Delicious!

Ingredients

  • FOR THE PIE:
  • ⅔ cups Sugar
  • ⅓ cups Flour
  • ½ teaspoons Salt
  • 2 cups Milk
  • 3 whole Egg Yolks
  • ⅔ cups Semi-Sweet Chocolate Chips
  • ½ cups Creamy Peanut Butter
  • 2 Tablespoons Butter
  • 2 teaspoons Vanilla Extract
  • 1 whole Single Pie Crust, Store Bought Or Your Favorite Recipe, Baked
  • FOR THE MERINGUE:
  • 3 whole Large Egg Whites
  • ½ teaspoons Vanilla Extract
  • ¼ teaspoons Cream Of Tartar
  • 6 Tablespoons Sugar
  • ½ cups Toffee Bits

Preparation

In a large saucepan, combine sugar, flour, salt and milk. Cook and stir over medium heat until thickened, 5–7 minutes. Remove from heat and gradually add egg yolks stirring constantly to prevent eggs from cooking. Return to heat and cook until thickened 1–2 minutes. Remove from heat and add chocolate chips, peanut butter, butter and vanilla extract. Stir until thoroughly combined and chips have melted. Pour pudding into pie crust.

Preheat oven to 325ºF.

To prepare meringue, combine egg whites, vanilla and cream of tartar in a large mixing bowl. Mix on medium high speed until whites turn frothy. Add sugar, one tablespoon at a time, mixing well between each. Continue beating until stiff glossy peaks form, 4–6 minutes. Add meringue to the top of the pie, all the way to the sides of the dish. Sprinkle with toffee bits.

Bake in preheated 325ºF oven for 8–10 minutes or until lightly browned. Remove from oven and set pan on a rack to allow pie to cool.

I have an issue with this recipe. The filling is runny. Are you supposed to bake that and then add the meringue? let sit in the fridge?
