A base of dried fruit and prunes keeps these bars chewy and moist, rolled oats and rice crisps add texture, a scoop of soy powder offers some protein, while nuts and dark chocolate chips provide healthy fats to keep you full and satisfied.
Preheat the oven to 350ºF. Combine all dry ingredients, prunes, and dried fruit mix in a food processor or blender and process for 30 seconds. Add in maple syrup and vanilla and process for another 1-2 minutes, or until the mixture blends together (it may form into a ball). Coat a small loaf pan with cooking spray and distribute the bar batter evenly. Bake for 10-12 minutes. Remove from the oven, cool, and store in the refrigerator until ready to eat.
