Another recipe from Mom. These are a bit different from the normal brownie. First, these aren’t chocolate brownies. The only chocolate in them are the chips. So they’ll be light in color. Second, they have a meringue topping on them. Yum.
In a bowl, cream together the butter, white sugar, and 1/2 cup brown sugar. Add the egg yolks (slightly beaten), water and vanilla. Mix together.
Add the dry ingredients (flour, baking powder, salt and baking soda). Mix well with the creamed mixture and spread in a greased 9×13 pan.
Sprinkle the chocolate chips over the top of the brownie batter and slightly press them down into the batter.
Beat the egg whites until stiff. Gradually add the remaining 1 cup brown sugar. Spread mixture smoothly over the top of the batter.
Bake at 375F for 25 minutes.

You are so Welcome! I’ve not come across a similar recipe in all the cookbooks I have, so thought it would be good here. I think my Mom got it from her sister-in-law, but have no idea of the true origins. We always called them Chocolate Chip Light Brownies (as they’re not a dark brownie), but I thought the Meringue in the title would make them stand out more to people.

Thank you so much for posting this recipe, my Mother made these, for her card playing group, we always got the leftovers! The recipe has disappeared from my collection and I was so happy to see it here.
