Description

Deliciously moist cake doughnuts dunked in a tangy buttermilk glaze!

Ingredients

  • FOR THE DONUTS:
  • 1 whole Egg
  • ¾ cups Buttermilk
  • ¼ cups Grapeseed Oil, Or Unsweetened Apple Sauce
  • ½ teaspoons Real Vanilla Extract
  • ½ cups Cooled Coffee
  • 1 cup All-purpose Flour
  • ¾ cups Cocoa Powder
  • 1 cup Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Kosher Salt
  • ¼ teaspoons Cinnamon
  • 1 pinch Freshly Grated Nutmeg
  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • 4 Tablespoons To 6 Tablespoons Buttermilk (or Whole Milk)
  • ⅛ teaspoons Real Vanilla Extact

Preparation

Preheat your oven to 350ºF. Butter and flour your doughnut pan(s).

In a medium bowl, whisk together the egg, buttermilk, oil and vanilla. Pour in the coffee and stir. Set aside.

In a large bowl, whisk together all of the dry ingredients. Pour the buttermilk mixture into the dry ingredients and stir until combined.

Fill the prepared doughnut pan 3/4 full and bake until they bounce back when touched and when a tester is inserted it comes out clean. Let cool a tad before removing and finish drying on a baking rack.

For the buttermilk glaze, combine the powdered sugar, buttermilk and vanilla. Whisk until smooth. Dunk cooled doughnuts (on both sides) into glaze and let cool on a wired rack for the glaze to harden.

Whoops! Looks like I forgot to list the sugar in the recipe… that makes a HUGE difference!

Glad I tasted the batter before baking. I didn’t realize until that point that the recipe didn’t call for any sugar! I went with 1/2 cup and that seemed about right. These were just okay, sorry:(

I’m sorry but these didn’t work for me…I like cake donuts but this was like eating an ok piece of chocolate cake. Sorry

Wowza, these are good! The coffee adds a fabulous richness to the chocolate flavor. I’m always looking to up the nutrition content, so I subbed greek yogurt for the oil and used spelt flour instead of white and they were still amazing. It didn’t say how long to bake, so I did 9 minutes and that was perfect. Thanks for another awesome recipe, Laurie!!
