A simple crunchy and chewy dessert bar. Not really sure where the name comes from, because, as far as I know, there isn’t anything inherently Chinese about these.
Preheat oven to 350°F.
In a mixing bowl, combine brown sugar, butter, eggs, vanilla, flour, baking powder, and salt.
Add chopped nuts.
Spread evenly into a 9×13″ baking pan and bake at 350°F for about 30 minutes, until crust begins to brown.
Cool slightly, cut and serve.
Dust with powdered sugar if desired.
*If you’d rather use self-rising flour, use 1 1/2 cups self-rising flour, and omit the baking powder and salt.

This recipe looks delightful. I would love to try it except for one thing…Maybe I shouldn’t be so shocked, but are you sure it is one full pound of brown sugar? That is an entire box! Please tell me it isn’t so! =]

I think I’ll make these soon…and maybe add white chocolate chips and coconut to the mix! Mmmm

This recipe looks the same as one I found in a Better Homes and Garden magazine in our outhouse back in the 50’s. That one was called Congo Squares, and the only difference I can see is that the recipe I found said to melt the butter. This recipe became our family favorite the very next day, and I still make it now! The bar is like a blonde brownie, sort of. If you bake them a bit too long, they turn into “dunkers”.

I just posted a recipe for Chinese Chews on my blog a few weeks ago. I have no idea where the name comes from either, especially since my recipe includes coconut. Sadly, mine only makes an 8X8 pan…
