These homemade granola bars are quick, easy, and full of a marvelous maple flavor. They’re crunchy but not brittle, with a slight chewiness in the center. They are sweet with rich chocolate chips and succulent coconut flakes, and most of the sweetness comes from natural things such as pure maple syrup, organic chocolate, organic berries, and a speck of brown sugar. This recipe is definitely a keeper.
Preheat oven to 325ºF. Line a 9×9-inch square pan with wax paper. Mix the rice crisps, oats, puffed kamut, and flour together in a large bowl and set aside.
In a small saucepan over medium low heat, heat butter, maple syrup, sugar, and vanilla extract until sugar has melted and mixture has thinned.
Pour the liquid mixture into the bowl with the dry ingredients and combine the mixture entirely and equally. Fold in blueberries, coconut flakes, and chocolate chips.
Spread mixture into the prepared pan and press down with the end of a spatula. Bake for 40-45 minutes, or until bars are browned on top. Remove from the oven and press down on the batter again with the back of a spatula. Allow to cool completely.
Once cooled, cut the bars into 16 individual bars. Serve and enjoy!
