This is a recipe I have been using for years. It is one of my more requested desserts!
Preheat oven to 325F. Paper-line 24 muffin cups.
Place a piece of cookie bar dough in each muffin cup. Bake 10-12 minutes or until the cookie has spread to the edge of the cup. (You will have a few cookie dough pieces leftover. I just bake them as directed and feed ‘em to the kids.)
Beat cream cheese, sweetened milk, eggs and vanilla in a medium bowl until smooth. Pour about 3 Tablespoons of the cream cheese mixture over each cookie in the cup. Bake for an additional 15-18 minutes or until set.
Cool completely in a pan on a wire rack. Top each cupcake with a level tablespoonful of pie filling. Refrigerate for 1 hour.
