Tasty, crunchy, chewy caramel corn.
Pre-heat the oven to 200 degrees (F).
Pop your bags of popcorn according to the instructions on the package. Pour the popcorn into a large bowl and sift out all the un-popped kernels. Put popcorn into a large oven safe pan.
Combine the butter, corn syrup, brown sugar and salt in a medium pot over medium heat. Bring to a boil and cook for 5 minutes.
Remove from the heat and add in the baking soda. Stir well. Pour over the popcorn and mix well.
Bake for 1 hour, stirring every 15 minutes. Cool on waxed paper.
*Instead of buying the bags of microwave popcorn, I make my own popcorn in the microwave. Take 1/3 Cup popcorn kernels, 1 Tablespoon vegetable oil and place into a large paper lunch bag. Fold the top over twice and staple shut with two staples. Shake bag and pop in microwave for 2 minutes, or until popping slows. Remove and use!
