Mama’s caramel icing recipe.
Melt margarine in a medium-large saucepan over low heat. Once melted, stir in salt and brown sugar. Cook over low heat for 2 minutes, stirring constantly. Add milk, increase heat a bit and continue heating and stirring until mixture boils. Remove from heat. Blend in the powdered sugar (pouring it in slowly as you stir). Add vanilla and mix well. Thin with a little milk or water if too stiff.
