Tangy, sweet and cool, there’s almost no better pie for the summer than Buttermilk.
Preheat oven to 450º Fahrenheit.
In a mixing bowl, combine sugar, flour and salt. In a separate bowl, beat egg yolks until pale and fluffy.
Add egg yolks and buttermilk to flour mixture and beat until well blended. Beat in melted butter.
Beat egg whites until stiff, then fold whites into buttermilk filling.
Pour the filling into the pie shell. Bake at 450º Fahrenheit for 10 minutes. Reduce heat to 350º Fahrenheit and bake for 35-40 minutes longer or until knife comes out clean.
Cool on a rack and store in the refrigerator.
