Description

An old family favorite that makes many appearances at our get-togethers. Crunchy cookie-esque topping, butterscotch, and vanilla ice cream come together to create an amazing dessert!

Ingredients

  • 2 cups Flour
  • ½ cups Oats
  • ½ cups Brown Sugar
  • 1 cup Chopped Pecans
  • 2 sticks Butter, Melted
  • 1 jar (11 Oz. Size) Butterscotch Sauce
  • 6 cups, 5 tablespoons, 1 teaspoon, 5-¼ pinches Vanilla Ice Cream

Preparation

Preheat your oven to 400°F. Mix together the flour, oats, brown sugar, and pecans in a large bowl. Add the butter and mix thoroughly. Spread the mixture evenly on a prepared baking sheet (greased or lined with parchment paper or Silpat) and bake for 12–15 minutes. Watch closely during the last few minutes, as the edges can start to get quite dark.

Using a 9 x 13 inch pan, crumble half of the mixture into the bottom. Top with half of the jar of butterscotch sauce. Cover with ice cream (see note below). Sprinkle the remaining cookie mixture over top of the ice cream and top with the rest of the butterscotch sauce. Cover and freeze for at least a couple of hours before serving.

Note: I buy my 1.5 litre of ice cream in the box form. Open your box of ice cream completely and slice the ice cream into 1-inch slices. The ice cream will start to soften slightly once on top of the warm cookie mixture, so let it sit for a few minutes and then spread the ice cream so that it is an even layer.

Thanks everyone! Sweetpea Nancy – by prepared pan I mean greased or parchment paper (or Silpat), whatever your preference! Just so that the base doesn’t stick. I hope you all give this recipe a try – it is so unbelievably good, words honestly can’t describe it!

Just a question: You mention “prepared pan”, what exactly do you mean by this? Parment paper lined, greased? This recipe looks so good, I must make this for our next family dinner.

This is a fabulous dessert! I’d give it ten mitts! I stuck to the recipe but you could use whatever ice cream you like (translation – I’ll be finding new ways to make this dessert all summer!) I served this yummy yummy dessert with a fresh strawberries on top and warm hot fudge sauce. One note – the crunchy base/topping in this recipe is sooooo crazy good that I’ll make it on its own to have around for a sundae topping.
