A great basic recipe for a blackberry pie. No unneeded extras, just a classic treatment.
Use your favorite recipe for pie crust or a store bought crust. You’ll need enough for a double crust.
Preheat oven to 400 degrees.
Combine berries, sugar, cornstarch, butter, juice, water, and tapioca. Let stand, tossing occasionally, for 20 minutes.
Line pie pan with 1/2 of dough recipe and spoon berry mixture into prepared pie pan. Arrange second 1/2 of dough recipe over top. Brush the top with egg white and sprinkle with sugar.
Bake in lower third of oven on a baking sheet until crust is golden brown and filling is bubbly. 1 hour – 1 hour 10 minutes.
