Description

Wonderful squares with a meringue type top.

Ingredients

  • 1 cup Butter
  • 1-½ cup Brown Sugar, Divided Use
  • ½ cups White Sugar
  • 2 whole Eggs, Separated
  • 1 Tablespoon Water
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • ¼ teaspoons Salt
  • ¼ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • 1 cup Chocolate Chips
  • ½ cups Chopped Nuts

Preparation

Cream butter and 1/2 cup brown sugar and 1/2 cup white sugar in bowl with hand mixer. Add egg yolks, water and vanilla. Then add dry ingredients (flour, salt, baking powder and baking soda) and mix together and pat into a greased 10 x 14 pan. Sprinkle chocolate chips and chopped nuts on top. The chocolate chips and chopped nuts can be left out and the cookie is still delicious.

Beat the remaining 1 cup brown sugar and the two egg whites till stiff peaks form. Gently spread on top of chocolate chips and nuts. Spread to the edge of the pan.

Bake for 20 minutes at 350 F, cool and cut into squares.

These bars were very tasty and easy to make. I did get several comments that they were a bit too sweet, so I cut back the sugar on the bars the second time around and that seemed to help.

I know all ovens are different, but I found that I needed to bake these for about 27 minutes for them to be done, and my oven is normally spot on for times.
