A light, lo-cal, easy-to-make sorbet.
Place berries in a single layer on a baking sheet lined with wax paper. Freeze for 1 to 2 hours or until solid.
In a large bowl combine frozen berries, water, and frozen concentrate.
Place half of the berry mixture in a food processor. Cover and process until almost smooth. Spoon into serving dishes.
Repeat with remaining berry mixture. If desired, garnish with fresh mint. Serve immediately.
(Or throw into a freezer safe bowl to make ahead or save for later.) Makes 6 to 8 servings.
