Description

This Berry Skillet Cobbler contains fresh strawberries and juicy blueberries with a hint of sweetness, baked with a brown sugar topping!

Ingredients

  • 16 ounces, weight Strawberries, Sliced
  • 2 cups Blueberries
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons White Sugar
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • ½ cups Unsalted Butter, Softened
  • 1 cup Brown Sugar
  • 1 teaspoon Almond Extract

Preparation

Preheat oven to 375ºF.

In medium bowl, combine strawberries, blueberries, lemon juice and sugar. Spread onto the bottom of eight 3 1/2 inch skillets, or one 12-inch skillet or casserole dish. Set aside.

In a medium bowl, mix together flour, baking powder, cinnamon, and salt. Set aside.

In a large bowl, cream together butter, brown sugar, and almond extract until smooth. Slowly add dry ingredients to butter mixture until combined. Mixture will be crumbly.

Drop mixture by the spoonful (you may need to pat mixture with your hands to form a ball) onto the berries. Bake for 22–25 minutes, or until topping is lightly browned. Remove from oven and serve immediately.
