Vanilla-flavored apple filling on a shortbread crust with a crumb topping.
Preheat oven to 350ºF and grease a square baking dish.
Combine the crust ingredients by hand until mixture is crumbly. Press into the bottom of the dish.
For the filling, lay the apples on top of the shortbread crust.
Bring the sugar, water, cornstarch, butter and vanilla to a boil in a saucepan, letting it cook for 2 minutes more after boiling. Pour the hot mixture over the apples.
For the topping, in a small bowl, combine the flour, butter, brown sugar and cane sugar together until crumbly. Crumble on top of the apples.
Bake for 25 to 30 minutes until the top is slightly browned and the vanilla syrup is bubbling along the sides of the pan.
