This glaze can be used to top pound cakes, cheesecakes, angel food cakes, really anything that needs a good fruit glaze!
1. Peel, core, and dice the apple into a fine dice. Smaller is better.
2. In a small saucepan combine diced apple, sugar, cornstarch, apple juice, lemon juice, and cinnamon if using. Heat over medium heat until all sugar and cornstarch is dissolved.
3. Stirring frequently, cook for several minutes over medium heat and reduce to low heat after the apples begin to soften. Cook on low heat until apples are completely soft.
4. Remove from saucepan and place into a serving dish. Refrigerate for a few minutes before serving.
