Ananas Ripieno (pineapple filled with fresh seasonal fruits dripping in a Cointreau Sauce)
Note: Servings will depend on the size of your pineapple. If your pineapple is extremely large or extremely small adjust the amount of fruit accordingly.
Cut the top off of pineapple. CAREFULLY remove the pineapple from the inside, using caution as not to pierce the walls or the bottom of the pineapple as this will be your serving vessel. After removing the core, cube the remaining pineapple fruit and place it into a large bowl. Add banana, kiwi and strawberries. Pour the lemon juice on top of fruit. Toss to combine. Add Cointreau and sprinkle sugar on top. Mix to combine. Place into the refrigerator to chill for minimum of one hour.
Prior to serving, transfer fruit into center of pineapple. Garnish with fresh mint.
