These are easy and quite yummy. The cinnamon makes them a little sweet and the vinegar makes them a little sour.
Strip and slice carrots into sticks. Cook carrots until tender. Drain and set aside. In a saucepan, combine sugar, vinegar, water and salt. Tie the cinnamon stick and pickling spices in a cheesecloth bag. Add to the vinegar mixture. Boil 5 to 8 minutes.
Pack carrots into 3 sterilized pint jars. Remove the spice bag and pour the boiling hot syrup over the carrots (leave little empty space). Put caps on tightly. Boil 30 minutes in a hot water bath.
