Description

This is truly “one more salsa recipe,” but it is still our favorite and the one I always make.

Ingredients

  • 4-½ quarts Chopped Tomatoes
  • 1-⅓ cup Chopped Onions
  • 3 whole Green Bell Peppers, Chopped
  • 5 whole Jalapeno Peppers, Chopped
  • 4 whole Hot Banana Peppers, Chopped
  • ½ cups Apple Cider Vinegar
  • 1 Tablespoon Oregano
  • 2-½ Tablespoons Salt
  • 1 Tablespoon Cumin
  • ⅓ cups Sugar
  • 1 teaspoon Chili Powder
  • 1 teaspoon Crushed Red Pepper
  • ⅔ cups Instant Clear Jel

Preparation

Mix together tomatoes, onions, peppers, and vinegar. Set aside. Stir together remaining ingredients and add to tomato/pepper mixture. Stir well. Put in clean pint jars. Process at 5 pounds of pressure for 5 minutes or hot water bath for 20 minutes. Makes 10-12 pints.

hmmm. I am wondering: what is “clear jel?” I use a tiny bit of corn starch in my recipe, but then I have to cook it a bit. does the clear jel serve the same purpose?
