I always grew up having chocolate chip zucchini bread, but this recipe is an awesome fresh and light alternative. Almost makes eating bread feel like the healthy thing to do!
1. Preheat your oven to 350ºF and coat your 9-inch loaf pan with non-stick cooking spray.
2. Stir together your dry ingredients in one bow: flour, sugar and baking powder. Stir together your wet ingredients in another: eggs, vegetable oil, zucchini and orange juice. Then stir the mixtures together, just until moistened. Do not over mix.
3. Spoon the batter into the prepared pan and bake until the center is firm and the sides are brown and crusty, about one hour. Let cool and enjoy!
