My grandmother always had a loaf of this in her kitchen to share with any last minute or unexpected guests, and it’s the only “sweet” bread my savory taste buds still crave all these years later. Not to mention it’s the easiest loaf I’ve ever made!
1) Preheat oven to 325F.
2) Mix together eggs, oil, sugar, zucchini, and vanilla. Add flour, salt, baking soda, cinnamon, baking powder, and nuts (if desired).
3) Divide into two lightly greased loaf pans and bake for approximately 1 hour, or until you can poke the bread with a toothpick and it comes out clean.
4) Slice and serve warm or cold.

I have this baking in the oven right now and it smells SO good! I cant wait to eat it.

This is identical to my blue ribbon zucchini bread except I use 3 cups grated zucchini and I grate it skin and all. Delicious!
