A little twist to the usual zucchini bread. If you love making and canning apple pie filling or apple rings, this is another way of using your own homemade goodies.
1) Preheat oven to 350F. Generously grease the bottom and sides of a 9″ loaf pan.
2) In a large bowl, mix canola oil, sugar, eggs and vanilla. Mix well. Stir in shredded zucchini and apple.
3) In a medium bowl, mix flour, baking soda, baking powder, cinnamon, ground cloves, nutmeg and salt. Add to zucchini mixture.
4) Fold in chopped nuts, if desired.
5) Pour into prepared loaf pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and cool.

Hello Marie, so glad you gave it a try. It is very addicting, hubby usually can’t even wait for it to cool.
These can also be made into jumbo muffins, only takes 25-30mins for the muffins. Great to bring along for a picnic or road trips.

Just made this bread after my sister-in-law (Shana) recommended it, and it is amazingly good! I cut myself a slice to try it and ended up having three! Time to put it away before I eat the whole thing!! I love how quick and easy this was to throw together! Even my sweet son James loves it, now I have a way to get him some extra fruit and veggies!
