Description

A good way to use up some summer squash!

Ingredients

  • 3 whole Eggs
  • 1 cup Oil
  • 2 cups Sugar
  • 2 teaspoons Vanilla
  • 2 teaspoons Cinnamon
  • 3 cups Self-Rising Flour
  • 2 cups Shredded Yellow Squash
  • Nuts Or Fresh Blueberries (optional)
  • _____
  • FOR THE TOPPING (optional):
  • 1 cup Sugar
  • ½ cups Flour
  • ½ sticks Butter, Softened

Preparation

Mix eggs, oil, sugar, and vanilla with a whisk. Add remaining ingredients. Mix with a spoon.

Add nuts or fresh blueberries if desired.

Pour into two greased bread pans of muffin tins (makes about 24 muffins). Bake at 350°F for 45 minutes for a loaf or 30 to 35 minutes for muffins.

For the optional topping, crumble the topping ingredients together with a fork and sprinkle on top of the muffins before baking.

Great muffins with blueberries and the topping!

Do you “de-seed” the squash before you shred them? Thanks :)

These were really great! I’m giving them a 5 because all my children loved them and were eating the overabundance of squash. One absolutely hates yellow squash. I did use applesauce for the oil. I had some that I canned that was really too thick and tart to eat but works great as an oil substitute. I also halved the topping. These were a great hit. I made a batch of blueberry muffins and a batch of nut bread. Thanks for the great recipe.

I really enjoyed this bread! I added walnuts to one of my loaves, and definitely liked that one better. The nuts are a great addition to this bread. I might half the topping on it next time though. I liked it, but it was a bit too much for my taste. Great recipe. Thank you!

I too was in need of ideas for “neighborly squash” when I found this recipe! I had blueberries & squash that needed to be used so it was perfect! I did use the topping on the loaves as well! Thanks, I think this on is a keeper for us! Yum!
