I’ve been on a strange healthy baking kick so I’ve been experimenting with different breads and what not. This bread is low fat, low sugar, whole grain (whole wheat), moist, and delicious. This is my adaptation of the original recipe from food.com.
1. Preheat oven to 350 degrees (F) and spray a 9″ x 5″ loaf plan with non-stick spray.
2. Beat eggs by hand, mash in bananas, and then add all wet ingredients, mixing well.
3. Mix in salt, baking soda, Stevia, cinnamon, and flaxseed meal.
4. Mix in flour.
5. Fold in chocolate chips, or pour half of batter into pan and sprinkle a layer of chocolate chips.
6. Pour remaining batter into pan.
7. Bake 45 minutes, or until toothpick comes out clean (given you don’t poke it straight through a chocolate chip!) when inserted.

I don’t have flaxseed, but I do have wheat germ that I’m trying to use up. Can I just swap them, even though I imagine they have different health benefits?
