Description

Healthy banana bread—with dark chocolate, obviously.

Ingredients

  • 1 cup Mashed Bananas (for 1 Cup You'll Need Roughly 3-4 Bananas)
  • ½ cups Applesauce
  • ⅓ cups Honey
  • 1 whole Egg
  • ¾ cups Milk (almond, Soy, Coconut, Or Half And Half Work Great Too!)
  • 1 teaspoon Vanilla
  • 1-½ cup Whole Wheat Flour
  • 1 cup Rolled Oats
  • 1-½ teaspoon Baking Powder
  • ¾ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 teaspoon Ground Cinnamon
  • ½ cups Dark Chocolate Chips (optional)

Preparation

Preheat the oven to 350 F and spray a standard size loaf pan with cooking spray. Set aside.

In a large bowl combine the banana, applesauce, honey, egg, milk and vanilla until creamy. Make a well in the center of the wet ingredients and add the remaining ingredients on top, reserving a few oats for sprinkling over the top of the loaf if you’d like. Gently mix to combine the dry ingredients, then fold them into the wet mixture until just mixed. Pour into the prepared loaf pan and sprinkle with extra oats.

Bake for 60-70 minutes until a toothpick inserted in the center of the loaf comes out clean. Remove pan from oven and set it on a rack. Let bread cool for 5 minutes in the pan. Then remove it from the pan to a rack to cool completely before covering or slicing and serving.

This bread has a dense texture with lots of banana flavor. A good high fiber treat for breakfast or any time.
