Description

Healthy, whole wheat clementine muffins that are full of a zesty, citrus flavor.

Ingredients

  • 1-½ cup Peeled And Chopped Clementines (Mandarin Oranges)
  • ⅛ cups Sugar
  • 1-¼ cup All-purpose Flour
  • ½ cups Whole Wheat Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 1 cup Buttermilk
  • ¼ cups Vegetable Oil
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract

Preparation

1. Preheat oven to 400°F. Line a 12-count muffin tin with paper liners and set aside.
2. In a small bowl, mix clementines with sugar and mash with fork. Set aside.
3. Mix flours, baking powder, baking soda, salt and cinnamon with a whisk in a large bowl. Set aside.
4. In another bowl, combine buttermilk, oil, egg and vanilla with a whisk.
5. Pour liquids into the flour mixture and add clementines. Fold to combine.
6. Evenly distribute batter into muffin tins.
7. Bake for 14-15 minutes, or until a toothpick inserted into a muffin comes out clean.

These were pretty good but definitely needed about double the sugar. I notice the original recipe had 1/3+ cup, which would be about right. Otherwise, they were super tender, light and moist.
