This whole wheat chocolate chip zucchini bread is made with olive oil and honey.
Preheat oven to 350ºF and grease a 9×5 inch loaf pan with cooking spray. If desired, you can also line the pan with parchment paper for easy removal.
In a medium-size bowl, whisk the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
In another medium-sized bowl, beat egg, honey, olive oil, and vanilla.
Make a well in the center of the dry ingredients, pour the wet ingredients into the dry, and mix until combined. Fold in the grated zucchini and chocolate chips.
Pour batter into prepared loaf pan. Press a few extra chocolate chips on top. Bake at 350ºF for 50–55 minutes, or until a toothpick inserted into center of the loaf comes out clean.
