I know, I know, another zucchini muffin recipe! But this time of year, what’s a gardener to do? These muffins aren’t overly sweet and they will use of some of that squash you have piled on every surface!!
Preheat oven to 375 degrees.
Spray muffin cups with nonstick cooking spray.
Combine streusel ingredients in a small bowl and stir until well mixed. Set aside.
For the muffins: Stir together all dry ingredients in a large mixing bowl. Fold in the grated zucchini and mix until it is well coated with the dry ingredients.
In a small bowl whisk together the eggs, buttermilk and melted butter. Fold into dry ingredients stirring just until combined.
Spoon batter into prepared muffin cups and top with struesel topping.
Bake for 18-20 minutes.

I was looking for a recipe low in sugar for my 15 month old son. He seemed to enjoy the ones that I made without the streusel topping. I added raisins for a little natural sweetness.

Can’t wait to try this one either! I love that you thought to combine oats with zucchini. I have an abunance of zucchini too!
