I know, I know, another zucchini muffin recipe! But this time of year, what’s a gardener to do? These muffins aren’t overly sweet and they will use of some of that squash you have piled on every surface!!

I was looking for a recipe low in sugar for my 15 month old son. He seemed to enjoy the ones that I made without the streusel topping. I added raisins for a little natural sweetness.

Just made these with 2 small changes: I made an oatmeal streusel topping and added an extra 1/2 tsp. vanilla.
They are a little bland but I think if you added too many other flavors, the blackberriness could be masked which would be a shame ! I will make them again. Careful not to over bake.

Although I loved the topping, the muffin was really bland. Maybe needs more sugar, or some honey? I really enjoyed the topping though.
