Description

Low-fat yet incredibly moist, the secret to “healthifying” these bites of honey-kissed goodness is applesauce and whole grain flour. 1 mini muffin is only 61 calories!

Ingredients

  • ½ cups White Whole Wheat Flour
  • ½ cups All-purpose Flour
  • ¾ cups Yellow Corn Meal
  • 2 teaspoons Baking Powder
  • 1 pinch Salt
  • 2 Tablespoons Extra Virgin Olive Oil
  • ½ cups Unsweetened Applesauce
  • 1 whole Large Egg
  • ¼ cups Honey
  • ½ cups Fat Free Milk
  • ½ cups Corn (optional)

Preparation

Preheat oven 350ºF.

In a small bowl combine flours, cornmeal, baking powder, and salt. In a separate medium-sized bowl, whisk together oil, applesauce, egg, honey, and milk.

Gently stir flour mixture into wet ingredients, being careful not to over-mix. Over-mixing will create tough and dense muffins.

Stir in the corn, if using. Once again, be careful not to over-mix.

Spoon into greased mini muffin tins (I got exactly 24 mini muffins) and bake for 11–12 minutes or until a toothpick can be removed cleanly or with minimum crumbs. Be cautious not to over-bake.

These are great served with chili, soup, or a couple of over-easy eggs.
