Made these for my husband to take to work today and have been getting forwarded emails of their delightfulness! I tripled the recipe, and used all mini-chocolate chips, about 7/8 of a bag. I also only had Nescafe instant coffee, but used the 100% Columbian for a stronger flavor. For the frosting, I used half regular roast Nescafe and half French Vanilla roast, and then topped them with the reserved mini chocolate chips. Total bonus was how yummy my kitchen smelled while I was making them! Thanks for a wonderful recipe!

Delish! Very rich and sweet, even without the icing…which I did not use this time around. Next time I make this, I might user fewer chocolate chips because the chocolate taste slightly overwhelms the coffee taste. But otherwise, perfection!

These are rot your teeth out AMAZING!! I made the frosting but w/ only 1 via….great recipe!

Valerie: You are right; I could not get 12 out of this recipe. I only got about 8. So I have increased the recipe by 1 1/2 and will be trying it again that way tomorrow.

I decided to make mini muffins when I saw the amount of batter and subbed mini chocolate chips. I ended up with 16 I’d be interested to know how many others got. I don’t think it would make 12 if you use a regular size muffin tin. They taste great! I love the idea of using the Via. Thanks!

2 packets of via come out to be able 1 tablespoon
Also, just a tip, when the milk it warm, let it cool down a little or else your egg will cook if your milk is too hot!

So I’m not a huge fan of coffee unless it’s all sugared and creamed down, so I thought I would enjoy these. Plus, my boyfriend is a ginormous coffee freak. I made them yesterday, including the icing. I liked them, but I need to quote my boyfriend here: “mmmmmmmmmmMMUFFFFFIN.”
I think that about does it.
