Description

This vanilla, honey and cardamom sweet bread is made with Greek yogurt. And there is no added sugar. Drool.

Ingredients

  • FOR THE BREAD:
  • 1 cup Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 3 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Cardamom
  • 4 Tablespoons Unsalted Butter, melted
  • 1 cup Vanilla Greek Yogurt
  • 1 whole Egg
  • 4 Tablespoons Honey
  • 1 teaspoon Vanilla Extract
  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • 2 teaspoons Honey
  • 1 dash Vanilla Almond Milk

Preparation

For the bread:
Preheat the oven to 350 F and coat a standard 9×5-inch loaf pan with non-stick spray. In a large bowl, combine flours, baking powder, salt and cardamom together. Set aside.

In another bowl, cream together melted butter and vanilla-flavored Greek yogurt. Whisk in egg. Stir in honey, then stir in the vanilla extract. Add the wet ingredients into the dry and mix until combined.

Pour batter into the loaf pan and bake for 35-45 minutes, testing near the end with a toothpick, until it comes out clean.

For the glaze:

Mix powdered sugar, honey and almond milk together in a small bowl or cup. When thoroughly mixed, slowly drizzle over the bread, starting at one side and ending on the other. Repeat this step until all the glaze is used.

Great quick bread. I love Cardamom and it’s hard to find easy recipes containing it.
