Description

Once you make this easy cornbread, and taste how moist and flavorful it is, you will never buy a mix again. It tastes just as good using gluten free flour as it does with regular flour. And it’s easy!

Ingredients

  • 1 cup Milk
  • ⅓ cups Evaporated Milk Or Half And Half
  • 1 cup Yellow Corn Meal
  • 3 Tablespoons Vegetable Oil
  • 1 whole Large Egg White
  • 1 cup Flour (gluten Free Is Fine)
  • 3 Tablespoons Sugar
  • 3-¼ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Baking Soda

Preparation

Whisk together the milks, corn meal, oil and egg white. In another bowl mix the flour (Bob’s Red Mill all purpose flour works best for gluten free purposes), sugar, baking powder, salt and baking soda. Then add the dry ingredients into the wet ingredients. Do not over mix. Pour into an oiled 9 x 9 pan and bake 20 – 25 minutes at 400 degrees (F).

This recipe is so fast and easy! I actually only used one bowl. I mixed the dry ingredients, made a well in the middle, mixed the wet in the middle and then combined it all!! It was delicious slathered in butter. Thank you for the recipe! This is going in my “keeper” file! :)

I made this corn bread yesterday in a pinch. It was amazing, especially gluten free. Absolutely wonderful and moist.
