Description

A yummy breakfast or dessert bread that can be made into a loaf or muffins. This bread takes me back to my childhood. My mom (Sweets)would make this and I just could not get enough.

Ingredients

  • 3 cups Flour
  • 2 Tablespoons Cinnamon
  • 1 teaspoon Baking Soda
  • 1-¼ cup Chopped Pecans (optional)
  • ½ teaspoons Salt
  • 1 cup Canola Oil
  • 4 whole Eggs, Beaten
  • 2 cups Sugar
  • 24 ounces, weight Frozen, Sliced Strawberries (thawed)

Preparation

1. Preheat oven to 350 degrees F.
2. Grease two 5X9 bread pans. I usually do one bread pan and a 12-count muffin pan, so that I have a little of both.
3. In a large bowl, mix dry ingredients together (flour through salt on the above list).
4. In a separate bowl combine oil, eggs, sugar, and strawberries.
5. Add strawberry mixture to the dry ingredients and stir together until combined.
6. Pour into greased pans. Bake bread for about 1 hour. (I bake the muffins for about 20 minutes).
