Description

This is a favorite fall recipe for me. Besides being good to eat, it makes your house smell wonderful. Try it for breakfast with some butter.

Ingredients

  • 1 cup Cooked, Mashed Sweet Potatoes
  • 1-½ cup All-purpose Flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ½ teaspoons Nutmeg
  • 1 teaspoon Cinnamon
  • 1 cup Sugar
  • 2 whole Eggs, Lightly Beaten
  • ¼ cups Vegetable Oil
  • 2 Tablespoons Milk
  • 1 cup Chopped Pecans
  • ½ cups Golden Raisins

Preparation

Peel and dice up your sweet potatoes. Cook until tender and mash. Allow time to cool. ( I usually do this the day before and store in the refrigerator.)

Preheat oven to 325. Grease loaf pan. Sift together flour, baking powder, salt, and spices in mixing bowl. Stir in sugar, eggs, oil and milk. Blend well. Stir in sweet potatoes, pecans and raisin. Pour batter into prepared pan. Bake 1 hour and 10 minutes or until toothpick comes out clean. Cool in pan 15 minutes and finish cooling on wire rack.

Recipe may be doubled.

I made this bread this weekend & entered it in our local country fair – and won 2nd place! I have to admit that the batter seemed very stiff and dry to me, so I added about 1/4 cup additional oil. Thanks for a great, prize-winning recipe!

I made the bread what I had on hand; 15 oz can of sweet potato, whole wheat flour, olive oil and minus 2 T of sugar and still yummy.
