My husband does not like sweet potato yet he couldn’t stop eating this sweet potato bread. It’s very moist and absolutely delicious!
Preheat oven to 350ºF. Lightly grease a 9×5 inch loaf pan with dairy-free cooking spray.
In a large bowl, combine shortening and sugars. Beat until light and fluffy. Add orange juice and mix until combined. Add sweet potato pureé and mix until well incorporated.
In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Add to batter and stir until combined.
Spread into prepared pan. Bake for 50 to 60 minutes or until golden and a toothpick inserted in the centre comes out clean. Cool in pan for 10 minutes. Turn out onto a a cooling rack and let it cool completely before slicing.
