Description

I’ve eaten this for breakfast, lunch, and dinner. My husband would eat the whole pan if I let him, it’s so good.

Ingredients

  • 1-½ cup All-purpose Flour
  • ⅔ cups Sugar
  • ½ cups Yellow Cornmeal
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • 1-¼ cup Milk
  • 2 whole Large Eggs
  • ⅓ cups Vegetable Oil
  • 3 Tablespoons Butter Or Margarine, Melted

Preparation

Preheat oven to 350F. Grease an 8″ or 9″ square baking pan. Combine flour, sugar, cornmeal, baking powder and salt in a large bowl. Add milk, eggs, oil and butter. Mix well.

Pour into the pan. Bake for 35 minutes or until a wooden pick inserted in the center comes out clean.

This is terrific cornbread. I’ve been making it for years and it’s my favorite. I usually sub in some white whole wheat flour and I always leave out the melted butter, and the 9″ pan makes it slightly shorter and crustier which I love. Everyone who tries it is amazed at how moist and delicious it is. Next time I make it I’m going to try using a little cake flour to see if it makes it even softer and poofier.

I love this cornbread. It really is the perfect balance of sweet and savory. Perfectly tender and soaks up load of butter….a real favorite in our house!
