This recipe is for a dense, hearty, healthy bread that reminds me of the bread my Swedish Grandmother made for me. It’s delicious toasted with honey and butter. I have a friend who toasts it and spreads avocado on top. Even better it’s a soda bread, so no waiting around for it to rise. Instant warm, comforting gratification.
Preheat oven to 350F.
Grease or line with parchment, two 9x5x3 inch loaf pans or 4 small loaf pans.
In the bowl of a stand mixer, cream the sugar and butter. In a separate bowl combine all dry ingredients. Add dry ingredients to the creamed mixture along with the buttermilk. Mix until thoroughly combined.
Divide mixture evenly amongst the pans and sprinkle tops with additional rolled oats and anise seeds.
Bake for 1 hour or until a toothpick comes out clean. Turn out of pans and allow to cool on racks.

I’m glad this will fit the bill! I have another more traditional Swedish rye made with light rye, anise seed and yeast which I will post later. Even though the weather is hot, I still crave homemade bread and hearty meals!
